Tabbouleh salad

Tabbouleh salad

Most of us haven't started counting on broken wheat as yet another great option for breakfast. Believe it, this is as nutritious a treat as is versatile; the salad here says enough.

Ingredients

1 ½ cups broken wheat

1 bunch finely chopped spring onion

1 ½ cups finely chopped mint leaves

½ cup olive oil

1/3 cup lemon juice

1 large ripe tomato, peeled and chopped



Preparation

Soak the broken wheat in cold water for an hour and drain

Combine with the spring onion

Add enough salt and pepper

Add some mint leaves

Now add the oil and lemon juice as required

Garnish with chopped tomatoes and serve
