Stuffed eggplant

Try out this special recipe of stuffed eggplant which is easy to make and extremely delicious.

Ingredients

6 egg plants (with stalks)
1 onion (finely chopped)
1 tbsp ginger-garlic (chopped)
½ cup coconut (grated)
1 tomato (de-seeded)
1 tsp chilli powder
½ tsp turmeric powder
1 tsp coriander powder
¼ tsp garam masala
½ tsp cumin seeds
½ tsp fennel seeds
6 shallots (sliced)
5 tbsp coconut oil
Salt as required
Chopped coriander leaves to garnish

Preparation

Heat 2 table spoons of coconut oil in a pan
Add onions, ginger, garlic, grated coconut, tomato, chilli powder, turmeric powder, coriander powder, garam masala and salt
Roast well
When this mixture cools down, ground it into a coarse paste
Split the egg plants into four without cutting off the edges
Stuff the ground masala into it
Heat coconut oil in another pan
Add cumin, fennel and shallots and roast
Add the stuffed egg plants and salt into it
Cook for 5 minutes with the lid on
When the egg plants are cooked well, flip it in the pan to roast all the sides
Garnish with chopped coriander leaves and serve hot.
