Coconut rice

Coconut rice

Basmati cooked in coconut milk, which gives it a unique buttery flavour!

Ingredients

¼ cup ghee
2 cups basmati rice, soaked in water for 15 minutes
5 cups coconut milk
Salt to taste
¼ cup coconut, grated

¼ mustard seeds
2 tsp peanuts
Coconut oil
1 dried red chilli
1 green chilli, chopped

Preparation

Heat the ghee in a heavy-bottomed vessel
Stir fry the rice in it till slightly brown
Add coconut milk and bring to boil 
Lower the flame and cook till done
Add salt and stand over a very slow fire till all the water is absorbed

heat oil in another pan
Splutter mustard seeds
Saute curry leaves, red chilli and green chillies
Add the rice to the pan and mix well
Turn off the stove
Roast grated coconut lightly and sprinkle over hot rice before serving
