A delicacy made from an unusual combination of pumpkin, dates and rose petals, the rose flower gulkhand is a rarity found only in some parts of the country.
50gm rock sugar (locally known as kalkandam)
1 ½ kg sugar
20 rose petals
Skin the pumpkin and grate.
Chop the dates.
Cook the grated pumpkin. Drain excess water and keep aside.
Heat ghee in a pan and add the pumpkin, sugar, honey, dates and rock sugar to it, allowing it to cook.
When cooked, add the rose petals, mix and remove from stove.
Decorate with rose petals and rock sugar, and serve!
