This lacy, light dish plays well as an easy cook, instant traditional Karnataka breakfast. Pair it with chutney, egg curry, prawns, chicken or any possible side dish that goes with the dosa family and give your morning a yummy start.
1 cup rice
2 tsp grated coconut
2 tsp oil
Salt to taste
Wash the rice and soak them for 3 hours
Strain excess water from the rice and grind it to a smooth batter.
Add the coconut to the batter and grind again to make a fine paste.
Add enough water and salt and mix it well.
Heat a nonstick pan and spread oil on it.
Pour 3 tsp batter on the pan and spread it evenly.
Drizzle some oil around dosa.
Roast it on medium flame until the bottom side turns light brown. There is no need to flip the dosa.
Fold the dosa and place in a plate. Serve with chutney or prawns/chicken curry.
