Ingredients

2 tbsp butter

1 clove garlic (chopped)

2 tbsp celery (finely chopped)

¼ tsp thyme

2 cups grated carrots

1 cup grated pumpkin

1 tomato (pureed)

3 cups water

1 tsp sugar

Salt as required

¼ tsp white pepper powder

2 tbsp fresh cream

2 tbsp roasted almonds

Preparation

Heat butter in a pressure cooker

Sauté garlic, celery and thyme for a minute

Add the grated carrot and pumpkin

Sauté for some time

Now add tomato puree and water

Allow this to boil

Now pressure cook on medium flame until a whistle

Open the cooker after the pressure has been released completely

Blend the carrot-pumpkin mixture

Into it add sugar, salt and white pepper powder

Garnish with fresh cream and roasted almonds.
