Mutton soup is considered an amazing remedy to cure fever, cough and hands and limb pain as well. It is an extremely refreshing and nutritious dish to be had during the monsoon season. Mutton soup, flavoured with spices, is included in the post delivery diet for women to regain their strength. The leg and shoulder bones of the goat are braised in the broth for 4-5 hours, on low flame.

Those who use mutton soup as a medicine should consume it at least 3, 5 or 7 times a week or a month. Do not drink cold water or eat food that is too spicy and sour when you are on a diet that includes mutton soup. If the soup is refrigerated, you could use it after reheating. However, do not boil it again.

In the olden days, the mutton soup was saved up to two days, without refrigeration, by keeping it near the warmth of the fire wood stove. Do not consume any other food or water for half an hour after having the mutton soup. Those who consume the soup as a medicine should follow these tips for better result and easy recovery. Here's the recipe of the special mutton soup which is delicious, nutritious, and helps you relax.

Ingredients

1 kg mutton bones
3.5 litres water
½ cup roasted coriander seeds
1 tbsp cumin
½ cup black pepper 
Ghee
Shallots
For the tempering:
2 tsp ghee (for 2 cups soup)
Pinch of salt
5-6 shallots

Preparation

Wash the bones well and put it over the stove along with water to be braised. (Preferably in a stone pot)
Add the coriander, cumin and black pepper powder and mix well
Braise the bones and when the broth has reduced to half, lower the flame to simmer
Simmer it until the broth gets reduced to 1.5 litres 
Pass the broth through a strainer after it has cooled down
Scrape the bones to extract maximum flavour and nutrients
Heat ghee and sauté shallots. Add salt as well
Add this tempering into the soup and mix well
Taste for seasoning and serve hot.
