Coconut apple salad


Coconut apple or pongu as it's called in Malayalam, is tasteless by itself. But it's an apt mix in puddings and other desserts. It has now apparently found its way into salads too as demonstrated in this recipe for coconut apple salad.


2 tbps tender coconut water
2 tbps lemon extract
1 tsp dijon mustard
1 tsp sugar (optional)
4 tbps extra virgin olive oil
Salt, pepper powder (as required)
100 gm lettuce (as many varieties)
50 gm coconut apple
50 gm grapefruit
20 gm microgreens
Honey pollen for decoration


Mix the first five ingredients and salt together in a bowl
Once the sugar is dissolved, pour in the olive oil thinly
Keep on stirring the mix while the oil is being poured in
Add in the powdered pepper
The salad dressing is ready
Arrange the lettuce in a dish and smear the dressing atop and mix gently. 
Spread the lettuce thus arranged in a serving dish along with coconut apple, grape fruit, and microgreens
Decorate with honey pollen and serve
