Rava is known for its great taste, lovely texture and amazing health benefits. If you're bored with plain chocolate and vanilla cupcakes, you've got to try these unique cupcakes made with rava.

Try this fun twist to your regular cupcake and be a little creative with your baking. This orange rava cupcake is the best to enjoy with your coffee and is perfect for all occasions.

The recipe is devised by Saju Easa from Mahe, the winner of Double Horse Onmanorama HomeChef Chef of the Month title. Saju who is settled in Dubai for 17 years has turned her passion for baking into a profession and earns money from home.

An expert in baking, Saju came out with this delicious, fluffy cup cake as a snack for her children.

Ingredients

3/4 cup Double Horse roasted rava

3 eggs

1/2 cup oil

3/4 cup freshly squeezed orange juice

120 gm fine-cut orange marmalade or jam

Grated zest of one orange

1/2 cup sifted plain flour

1 1/2 tsp baking powder

3/4 cup sugar

1/4 cup desiccated coconut

1 1/2 tbsp ground almonds

1 cup orange juice

Silicon cupcake moulds

Crushed almond to garnish

Cherry to garnish

Preparation

Whip the three eggs

Add 1/2 cup oil to it

Add 3/4 cup freshly squeezed orange juice

Add 120 gm fine-cut orange marmalade or jam

Add grated zest of one orange to the mixture

Blend into the mixture and add 3/4 cup Double Horse roasted rava

Add 1/2 cup sifted plain flour

Add 1 1/2 tsp baking powder

Add 1/4 cup sugar

Add 1/4 cup desiccated coconut

Add 1 1/2 tbsp ground almonds

Mix it well and make sure that no lumps remain

Pour the batter to the silicon cupcake moulds

Bake at 150°C for 30-35 minutes till done

Boil 1 cup orange juice with 1/2 cup sugar

Pour this mixture on top of the cupcake to get a juicy texture

Garnish with crushed almonds and cherry
