Smoked capers and tomato soup

The term smoked food always brings to mind images of spicy chicken legs or veggies with that slightly burnt texture. And soups are definitely not one of them. But believe us, if you are a fan of the smoky flavor, just bring it into literally everything- especially this creamy tomato soup flavored with delicious capers and fresh basil leaves.

2 tbsp capers

2 tomatoes, chopped

6 leaves of holy basil

1 onion, chopped

4 tbsp chopped garlic

4 tbsp chopped parsley, celery and leeks

1 carrot, sliced

1 tbsp ground black pepper

2 tbsp butter

2 tbsp olive oil

Salt as required

Heat a pan pour the olive oil

Add garlic, onions, leeks, celery and parsley and capers to the pan

Saute it well on low flame

Add carrots and tomatoes after a minute

Add some salt, freshly crushed black pepper

Mix well and allow it to cook for some time

Add water and bring it to boil

When it boils, cook it on simmer for 20 minutes

Cool down the cooked mixture and blend it well in a mixer grinder

Boil it again

Add some basil leaves

Meanwhile, in a large skillet, place some charcoal embers in a small pot

Partially cover the skillet with aluminum foil, keeping the charcoal pot inside

Pour the soup to the skillet around the charcoal pot

Add some capers to the soup

Add some butter to the charcoal and immediately cover the skillet and pot with aluminium foil

Keep it tight for 10-15 minutes

Transfer the soup from the skillet
