3 large mackerels
Oil- as required
¼ tsp mustard
1 large onion, chopped fine
2 green chillies, chopped fine
½ tsp ginger, crushed
½ tsp garlic, crushed
½ cup coconut, grated
½ tsp turmeric powder
2 ½ tsp red chili powder
A few curry leaves
A few coriander leaves, chopped
Wash and clean the fish.
Now carefully make two parellel deep slits on the backside of the fish from head to tail, ensuring the abdomen does not get cut.
Skillfully remove the bone through the slits and wash it leaving any flesh on.
Scoop out the intestines, separating roe if any, wash and clean the fish and keep aside.
Heat one teaspoon oil in a frying pan and splutter the mustard and sauté the chopped onion, green chillies, ginger, garlic.
Now its time for the grated coconut, ¼ teaspoon turmeric powder, ½ teaspoon red chili powder and salt to go in. Stir all the while.
Add the fish bones and roe.
Pour in ¼ cup water, and cook , covered.
Separate the flesh if any from the fish bones and do away with the bones.
Keep stirring continuously and cook till all the water is absorbed.
Stuff the fish with the above masala.
Sew the fish throughout from the neck to tail with needle and thread to make it appear whole.
Marinate the stuffed fishes with a mixture of remaining turmeric powder, red chili powder and salt.
Add enough oil in another pan and shallow fry.
Serve hot¦. But dont forget to remove the thread before eating!
