Tasty breakfast using eggs and leftover bread


Do you ever wonder what to do with the bread sitting in your fridge, nearing its expiry time? Lots of interesting dishes, both sweet and savory, can be easily made using bread. Check out this easy recipe of a filling breakfast dish.


4 slices bread
6 cloves garlic (finely chopped)
1 inch piece ginger (finely chopped)
2 green chilies (chopped)
1 onion (finely chopped)
1 cup sweet corn flour
1 tsp pepper powder
1 tbsp tomato ketchup
2 tbsp soy sauce
4 eggs
Coriander leaves as required


Heat a pan and toast the bread slices on both sides
Cut the toasted bread slices into pieces
Heat some oil in the same pan
Sauté garlic, ginger, green chilies and onions
Add pepper powder, tomato ketchup and soy sauce
Mix well
Into it add the eggs
Give everything a good mix
When the eggs are half cooked, add the toasted bread pieces
Garnish with chopped coriander leaves.
