Healthy vegan asparagus soup

2 tbsp olive oil

l onion chopped

2 garlic cut into thin pieces

½ cup asparagus (ends trimmed and chopped)

1/4 cup Spring onions chopped

1 potato cut into thin pieces

Salt and pepper to taste

1cup coconut milk

1cup water to boil veggies

1 tbsp lemon juice


Heat a pan

Drizzle with 1 tablespoon of olive oil and put chopped asparagus n spring onions

Season with salt and pepper and roast until the asparagus and spring onions slightly softens

Keep it aside

Pour remaining olive oil in a pot over medium heat

Add the chopped onions and garlic and cook until onions are translucent, about 5 minutes

Add the potatoes, season with salt and pepper, then cook with the onions and garlic for a few minutes

Pour the water and coconut milk

Bring mixture to a boil, then reduce heat to a simmer until the potatoes are tender

Add the roasted asparagus and spring onions into the pot

Uses an blender to blend the soup until it€™s smooth and creamy

Add lemon juice. Garnish with some chopped spring onions and serve hot.
