Zesty mushroom rice with firecracker chicken


Here is an interesting recipe of the delicious mushroom rice with fire cracker chicken which is nutritious as well.


For the rice

2 cups basmati rice

1 cup mushroom (diced)

1 onion

5 cloves garlic

2 cups coconut milk

2 cups water

1 cup chicken stock

Cloves, cinnamon, and cardamom as required

Salt as required

½ tsp black pepper powder

2 tbsp ghee

For the fire cracker chicken

½ kg chicken

Salt as required

1 tsp black pepper powder

2 eggs (beaten)

1 cup corn flour

1 tbsp hot sauce

1 tbsp tomato sauce

1 tbsp soy sauce

Salt as required



Wash the basmati rice and drain excess water

Heat some ghee in a pan

Add the washed basmati rice and roast well

In another pan, heat some more ghee

Add finely chopped garlic

Add chopped onions and sauté

Add diced mushrooms, chicken stock and black pepper powder

Stir well

Add coconut milk and water

Add the roasted rice and cloves, cardamoms and cinnamon, and salt as required

Cook the rice well with the lid on

Fire cracker chicken

Score the chicken and marinate with salt and pepper

Heat oil in a pan

Coat the marinated chicken with corn flour first

Dip the coated chicken pieces in beaten eggs

Add the chicken pieces into the hot oil and deep fry

In a bowl, add hot sauce, tomato sauce and soy sauce

Mix well

Brush this sauce over the fried chicken

Sprinkle some chilli flakes as well

Bake the chicken in an oven for half an hour

Serve hot with green salads and crackers
