Give chicken a chilli-ginger spin


Here is a simple recipe of chilli-ginger chicken which is spicy and loaded with local flavours.


1 kg chicken
2 ½ inches ginger (crushed)
18 dried red chillies
1 tsp turmeric
Salt as required
Oil as required
1 tsp fennel seeds (crushed)


Clean the chicken and cut into medium sized pieces
Marinate the chicken pieces with crushed ginger, crushed dried chilli, turmeric powder, and salt
Keep it aside for at least for an hour
Heat oil in a hard anodized pan
Add the marinated chicken pieces and cook with the lid on 
Give the chicken pieces a flip
When the chicken is cooked, take off the lid
Reduce the excess water by simmering
Garnish with crushed fennel seeds
Chili-ginger chicken tastes best when served hot
