Orange-banana pancake

Pancakes are predominantly European breakfast material. They are simply flat cakes, often thin and round and fluffy. High on vitamins, the ingredients that go into them are day-long energy-boosters. Children and adults alike have a soft corner for pancakes which can be tweaked to their own special recipes.

Pancakes are made with all-purpose flour, eggs, milk and butter. (It is the eggs and the baking powder which give pancakes their softness..) When combined with fibre-rich fruits and oats, they make for a full and wholesome breakfast.

Here’s to a delicious pancake recipe with plantain, oats, blueberry and specially made orange syrup.

Follow the steps to get eight pancakes.

For orange syrup:

2 cups of orange syrup

2 tbsp sugar (optional)

1 tbsp corn starch

For pancake:

1 cup all-purpose flour

½ cup powdered oats

1 tbsp sugar (optional)

2 pinches of baking powder

A pinch of salt

1 tbsp melted butter

1 egg

3 plantains

Blue berries (as required)

Vanilla extract (as required)

2 cups of milk.


For orange syrup:

Boil 2 cups of orange juice till it is reduced to ¾ cup

Mix sugar and corn starch in water and add to the juice

Keep stirring till it thickens

Take it off the flame and allow it to cool

Remove lumps, if any

For pancake:

Mix together all-purpose flour, salt, sugar, baking powder and oats

Beat eggs, milk, butter and vanilla extract to a frothy consistency

Add the above a little by little to the flour mix and keep stirring with a fork to avoid lump formation

Mix gently to keep pancakes from turning hard and thick

Heat a non-stick skillet, smear a bit of butter and ladle out a scoop of the batter to make small round crepes

Lower the flame when bubbles break on top

Immediately spread the plantains, chopped thin and round, on the pancake

Cover and cook for a few minutes

When the sides of the pancake are done, lift it gently and smear some sugar on the skillet

Flip over the pancake so that the side with the plantain goes face down on the skillet (a small metal cooking pot with a long handle)
