The soft and fluffy palappam is everybody’s favourite to be had with vegetable, egg or meat curry. It is an easily digestible delicacy. Over the years, this everyman’s dish has emerged out of its shadows to appear as hot items at weddings and special functions. With luxury hotels writing them down on their menu, the appam has acquired star status today.

Here’s a quick-fix palappam recipe. All the ingredients readied the previous day, can be ground in the morning. It is then set aside for an hour and prepared.

Ingredients

1 cup raw rice (washed and strained)

1 tbsp rice (cooked)

½ a coconut scraped

A pinch of yeast or soda

2 tbsp sugar

Pinch of salt

Preparation

All ingredients are to be mixed and set aside. There is no need to add extra water.

After six hours, grind everything together in a mixer grinder with the required amount of water to make a loose batter.

Keep for an hour and make soft palappams.
