Soft, round Vellayappams, replete with the mild yet irresistible coconut flavour make perfect breakfast options. Pair them up with a stew and your day is made!

Ingredients

½ kg rice flour 
1 coconut grated
1 cup coconut milk
Salt, as required
5 shallots
1 tsp jeera

Preparation

Mix the coconut milk with the rice flour
Blend well with your hands and keep aside
Now add the coconut, jeera and shallots to a mixer and coarsely grind
Add that to the rice flour mixture
Add salt and blend well
Add a little more water to get it to the right consistency
Keep closed for half an hour
On a dosa pan, use a small scoop of batter for one appam
Flip when one side is done, and delicious Vellayappam is ready to be served hot
