Orappam

'Orappam' is a lightly baked, traditional snack of Kerala. Its crust is crunchy while it is soft and airy on the inside. This delicious snack has the goodness of jaggery and coconut milk as well. Check out this recipe of Orappam which is often prepared during Onam festival.

Ingredients

1 cup rice flour
2 cups second extract of coconut milk
½ cup first extract of coconut milk
1 egg
2 tsp ghee
Preparation
1 cup melted jaggery
Pinch of salt
¼ tsp nutmeg powder
¼ tsp cardamom powder
1 tbsp cashews
2 pinch caraway seeds

Preparation

Pour the second extract of coconut milk into the rice flour and mix without forming any lumps 
Heat the first extract of coconut milk in a thick bottomed pan
Allow it to boil until oil begins to separate
Beat the egg by adding ghee, melted jaggery, and salt
Add this into the rice flour-coconut milk mixture (batter)
Heat this mixture on simmer and stir continuously
When it begins to thicken, add the boiled first extract of coconut milk and mix well
Into it, add the nutmeg powder and cardamom powder
Mix everything well until it has sticky and gooey consistency
Now add the caraway seeds and cashews
Mix well and take it off the heat
Transfer this orappam mix into a greased cake tin and level the top using a spoon
Place a few cashews on top of it
Bake for half an hour in a pre-heated oven at 160°C
Cut into desired shape and serve.
