Quick brinjal curry

Here's an easy curry you can make with brinjal. This goes well with rice as well as chappathi.

Ingredients

4 brinjals
½ cup coconut
½ cup curds
1 teaspoon chilly powder
¼ teaspoon turmeric powder
½ teaspoon jeerakam (cumin)
Salt
1 pinch asafetida
¼ teaspoon mustard seeds
4 teaspoon coconut oil
Finely chopped coriander leaves

Preparation

Chop the brinjal into thin round slices, rub in a bit of chilly and turmeric and fry in 1½ spoons of oil
Grind the coconut, mustard and chilly powder to a fine paste
Add in the curds and salt and mix well
Drop in the fried slices of brinjal to the mixture
Heat the oil and allow the cumin to splutter
Add the asafetida and turn off the flame
Add to this ¼ teaspoon of chilly powder
Mix well and garnish with coriander leaves.
