Tasty beetroot pickle for biryani

It is the delicious and spicy pickle which adds the perfect flavour combination for a plate of piping hot biryani. Any biryani lover would vouch for the incredible flavour that a tiny bit of pickle would add to the dish. Delicious beetroot pickle tastes amazing with biryani. The sweetness from the dates perfectly cuts through the sourness and spiciness of the beetroot pickle. Try out this unique recipe of beetroot pickle.

Ingredients

250 gms beetroot

250 gms dates (without pits)

100 ml vinegar

50 gms pickle powder

1 tbsp sugar

A piece of ginger

2 green chillies

5 cloves garlic

1 tsp asafoetida

1 tsp mustard seeds

1 tsp fenugreek seeds

Curry leaves

Salt as required

1 tbsp coconut oil

Preparation

Cook the beetroot with the skin on. Removing the skin would take out its vibrant colour and nutrition as well

Soak the dates in hot water and grind well

Into it add sugar, pickle powder, asafoetida, vinegar and salt as required

Mix well

Grind the beetroot well and add it into the dates mixture

Grind the ginger, garlic and green chillies and add this into the beetroot - dates mixture. These ingredients are optional and could be avoided

Mix well

Heat coconut oil in a pan and splutter the mustard seeds

Into it add the fenugreek seeds and curry leaves

Roast well and add this tempering into the pickle

If the pickle is too thick, loosen it by adding hot water as required

Add more vinegar for sourness or sugar for sweet if required.
