Quick breakfast: Vegetable paniyaram

Those who are bored eating the same old idly and dosa can try delicious paniyarams for breakfast. These little treats can be prepared with the same batter for dosa.

Add a handful of chopped vegetables like carrots and beans into the batter to make excellent vegetable paniyarams. Kids who do not like to eat vegetables would definitely love these soft paniyarams.

Ingredients

1 litre dosa batter

1 carrot (grated)

5 beans

1 large onion (finely chopped)

2 green chillies

Small piece of ginger

A bunch of curry leaves

Coriander leaves (finely chopped)

1 tsp mustard seeds

1 tsp urad dal

1 tsp yellow lentils

1 tsp cumin

A pinch of asafoetida

Coconut oil as required

Salt as required

Preparation

Heat oil in a pan and add the mustard seeds
When these splutter, add the urad dal, yellow lentils and cumin
Roast well until the urad dal and yellow lentils turn golden brown
Into it add asafoetida and mix well
Add the onions and sauté
Add the green chillies and ginger
Into it add the beans and sauté well
Add the grated carrots and salt as required
Add the curry leaves and coriander leaves and mix well
Allow this vegetable mixture to cool down
Add this mixture into the dosa batter and mix well
If the batter becomes too thick, add some water to loosen it up
Heat the vessel in which unniyappam is prepared
Rub oil in all the holes in the vessel
Pour the batter into the greased holes
Flip the paniyarams when the top of it is firm enough
Cook until the paniyarams are roasted well on the outside and soft in the inside
These hot vegetable paniyarams tastes amazing with shallots chutney and sambar.
