Padavalanga Nirachathu

Try out this simple recipe of stuffed snake gourd which is extremely delicious and nutritious as well. The taste of the dish would be enhanced if locally grown fresh snake gourd is used.

Ingredients

1 medium sized snake gourd
2 tbsp oil
1 cup onion (finely chopped)
1 cup tomatoes (finely chopped and juices drained)
1 tsp ginger (finely chopped)
1 tbsp garlic (finely chopped)
7 green chilies (finely chopped)
Salt as required
1 cup potatoes (cooked and mashed)
2 tbsp coriander leaves (chopped)
100 gms peanuts (without skin)

Preparation

Cut off the edges of the snake gourd
Cut one of its sides along the length and scoop out the pits
Heat oil in a pan 
Sauté chopped onions, drained tomatoes, ginger, garlic, green chillies and salt
When the mixture is roasted well and turns fragrant, take it off the heat
To it, add the mashed potatoes, chopped coriander leaves, and peanuts and mix well
Stuff the cleaned snake gourd with this filling
Tie the snake gourd on the edges and in the centre using plantain thread
Steam for 15 minutes
Stuffed snake gourd can be served with rice and curries.
