Try this pumpkin leaves stir fry for lunch

Pumpkin which is a rich source of vitamins A and C is also an excellent remedy for problems related to indigestion. The leaves, flowers, and stalk of the pumpkin plant could be turned into delicious dishes. Here is a simple recipe of pumpkin leaves stir fry or thoran.

Ingredients

1 1/2cup pumpkin leaves (cleaned and finely chopped)

1/2 cup potatoes (cut into small pieces)

1 tsp garlic (crushed)

1 tsp shallots (crushed)

1 1/2 tsp chili powder

1/2 tsp turmeric powder

Salt as required

2 tsp coconut oil

Preparation

Heat oil in a pan

Add the crushed garlic and shallots

Sauté well

Add the potato pieces

When the potatoes are half cooked, add chili powder, and turmeric powder

Mix well

Add the finely chopped pumpkin leaves

Cook for 5 minutes with the lid on

Serve hot with rice.
