Soft and fluffy vattayappam

Vattayappam, Kerala's own fermented steamed rice cake is one of the healthiest tea-time snack. Popular in central parts of Kerala, this appam is slightly sweet and spongy. The fresh coconut as the main ingredient and dry fruits as toppings make the dish perfect for the evening meal.


1/2 kg raw rice

2 small coconuts (grated)

3/4 tsp yeast

1/2 tsp sugar

1/2 cup warm water

1 cup sugar

Cashew and raisins to garnish


Soak the raw rice for half an hour and strain well

Prepare 1 1/2 cups first extract of coconut milk and 2 cups second extract

Extract the milk entirely off the grated coconut

Grind this coconut scrapes along with raw rice into a fine powder

Pass this coconut - rice powder through a sieve

Grind it again and pass through sieve

Keep aside1/2 cup (thari) of this powder

Add the second extract of coconut milk into this thari

Mix well

Boil this mixture until it turns thick. It's called kappi

Mix yeast and sugar in warm water

Allow it to rise

Add this to the powdered coconut - raw rice mixture

Add sugar in 1/2 cup second extract of coconut milk

Heat this on low flame until the sugar melts

Add this into the kappi

Add the coconut milk, sugar and kappi into the coconut - raw rice powder

Add the first extract of coconut milk

Mix well without forming lumps

Allow it to rise

On a greased tray, pour this mixture

Garnish with cashews and raisins

Steam well
