For those of us who love all things pineapple, this moist and delicious cake here is quite irresistible.

Ingredients

2 tsp corn flour

¼ cup pineapple juice

¼ cup orange juice

2 cups pineapple chopped

2 tbsp. sugar

½ cup butter

½ cup powdered sugar

2 eggs

1 cup flour

1 tsp baking powder

1 tsp grated orange peel 

Preparation

Combine together the corn flour, orange juice and the pineapple juice

To this, add the chopped pineapple bits along with 2 tbsp sugar and cook on low flame till this thickens

In a baking tin kept ready, pour this mix and spread evenly. Preheat the oven to 350—¦ F.

Beat the sugar and butter well. Into this, add the eggs, beat well and follow it up by adding the dry ingredients of flour and baking powder

Make a smooth batter without lumps

Add in the grated orange peel. Pour this batter over the pineapple layer in the cake tin and bake for about 30 to 40 minutes
