Kashuvandi thoran: Vishu special side dish using cashew

Kasuvandi thoran or cashew thoran is not a usual dish you see in sadya. But this special side dish is worth a try for this Vishu.

Ingredients

1 cup cashews

Salt as required

Water as required

½ cup grated coconut

2 cloves garlic

½ tsp cumin

½ tsp turmeric powder

2 green chillies (finely chopped)

Water as needed

2 tbsp coconut oil

3 shallots (finely chopped)

2 dried chillies (finely chopped)

Curry leaves as required

Preparation

Cook cashews with salt and water as required

Crush grated coconut, garlic, cumin, turmeric powder and green chillies together by adding a bit of water

Heat coconut oil in an earthen vessel

Add the shallots, dried chillies and curry leaves

Roast well

Add the coconut paste and sauté for 5 minutes

Into it add the cooked cashews and cook for 5 more minutes.
