Ginger sponge pudding

Make easy pudding that just needs a steamer and ingredients that are accessible from your home.


2 cups maida, sieved
100gm butter
1½ tsp baking powder
½ cup sugar
1 egg, beaten
½ cup milk
1 tsp ground ginger

For the sauce

1½ tbsp corn flour
½ cup sugar
A pinch of salt
¾ cup water
½ cup peeled jaggery
Grated lemon zest
2 tbsp butter


Mix butter well into the maida by hand
Add baking powder and sugar to it and mix
Beat egg well. Add milk and ground ginger to it and beat again
Add this egg mixture to the maida mix and blend well together
Transfer it to a greased plated vessel and cover properly with foil paper. Ensure that absolutely no water enters inside
In traditional appam making vessel, steam the cake. Cook for around one hour on low heat
For preparing the sauce, mix corn flour, sugar and salt in a saucepan. Mix well by adding water to it. Add jaggery
Reduce it to a thick paste, keeping it in low heat. Add the grated lemon zest and butter to this and serve hot
Pour the sauce over the pudding and served. The sauce can also be separately placed in a tiny bowl
