Celebrate with the French: Macaron Day (basic recipe)

French cuisine is known for sophistication and nothing spells sophistication louder than delicate melt-in-mouth cream cookies. Macarons date back to the 8th century and the French have dedicated a day to celebrate this culinary heritage on March 20.

So, why not give these delicious delicacies a try at home with this easy recipe.

Ingredients

1 ¾ cups powdered sugar
1 cup almond flour
3 egg whites
¼ cup  granulated sugar
½ teaspoon vanilla essence
2 drops food colouring
For cream:
1 cup  unsalted butter
3 cups  powdered sugar
1 teaspoon vanilla essence
3 tablespoons full cream milk

Preparation

Sift the powdered sugar with almond flour and a pinch of salt
Beat the egg whites
Add granulated sugar to it gradually and keep beating till stiff peaks start to form
To this add vanilla essence and food colour of your choice
Divide your sifted dry ingredients into 3 parts and add one at a time to the beaten eggs
Mix with a spatula in one direction to incorporate air
Transfer to a piping bag and pipe out 3cm circles onto the baking sheet and rest them before baking
Meanwhile, preheat oven at 150šC 
Bake macarons for 15 mins then put aside to cool
For buttercream filling, start by beating the butter to soften it
To it gradually add sugar and increase the mixing speed
Add the milk and vanilla and continue mixing till texture feels light
Transfer to piping bag and add to one macaron shell and top with another to create a cookie sandwich
Store in an airtight container in fridge and enjoy for a week!
