Here is an easier version of the pumpkin soup recipe for 6 people.

Ingredients

1 kg butternut (cut into small pieces)
15 ml margarine 
Garlic and cinnamon to taste 
1 onion (finely chopped)
Vegetable stock as required
750 ml water

Preparation

Melt the margarine and saute crushed garlic and chopped onion in it
Add cinnamon stick and sauté for another 2 minutes
Add butternut to it along with water and vegetable stock
When it boils, simmer and cook for 25-30 minutes
Blend the mixture after that and add either yogurt or fresh cream for a thicker texture
