Egg Rice

Egg Rice

A superdelicious rice salad stuffed inside egg crepes.

Ingredients

½ cup basmati rice
1 tbsp refined oil
5 cloves of garlic, crushed
1 broccoli, chopped fine
1 carrot, chopped fine
3 beans, chopped fine
Salt to taste
¼ cup chicken, boiled and minced
¼ cup tinned corn
4 eggs

Preparation

Cook rice, strain it and spread it on a paper to ensure its moisture free.
Sauté garlic in a nonstick pan.
Add chopped broccoli, carrot, beans and salt to this and sauté well.
When the vegetables have cooked well, add chicken, corn and rice and toss it well.
Whisk eggs 1 at a time, add required salt and make omelettes.
Stuff each omelette with the rice salad, roll it and serve.
