Bean spinach salad

A green and red burst of freshness, with bite-sized pine nuts for the perfect crunch, the beans spinach salad makes for a great dish right before dinner.

Ingredients

200gm beans

100gm spinach

100gm cherry tomato

50gm roasted pine nuts


Dressing


2 tbsp olive oil

2 tbsp apple cider vinegar/red vinegar

¼ tsp mustard

Salt, pepper powder, as required




Preparation

Drop the beans in boiling water, let them stay awhile until half-cooked

Chill spinach leaves and halved tomatoes

Once chilled, mix them up with the beans in a bowl

Make the dressing and pour over the salad

Finally, layer with roasted pine nuts
