Vegetable Chicken Rice

Want the goodness of both veggies and meat cooked to a perfect combination with rice? Look no further, let the aroma of this mixed rice sweep you off your kitchen floors!

Ingredients

3 cups biriyani rice

½ tbsp + 1 ½ tbsp Ghee

1 tbsp + 1 ½ tbsp oil

½ tsp ginger, crushed

1 tsp garlic, crushed

2 large + 1 half onion, chopped lengthwise

4 green chillies, chopped lengthwise

½ cup beans, finely chopped

1 cup cabbage, finely chopped

½ cup carrots finely chopped

1 cup chicken, cooked and minced

1 tomato, finely chopped

6 cashew nuts, cut in pieces

6 raisins

½ tsp garam masala powder

A few sprigs of coriander leave

Salt, as required

Preparation

Wash the rice and drain
Heat half tbsp ghee and one tbsp oil together in a pan and saute the ginger and garlic with salt
Add the 2 onions, green chillies, beans, cabbage and carrot, stirring all the while
Add the chicken and tomato
Pour half cup water and cook till all the water is absorbed
Heat 1½ tbsp ghee and one and half table spoon oil together in another pan and fry the pieces of the half onion, cashew nuts and raisins
Keep aside and combine the mix with coriander leaves and half the portion of garam masala
Pour six cups of water in the remaining ghee and oil mix in the pan. Add salt when it starts boiling. Add rice and cook till all the water is absorbed
Combine the chicken masala and the remaining portion of garam masala with the rice
Transfer the rice to a serving plate and garnish with a mix of fried onion, cashew nuts, raisins etc
Serve hot
