Tasty and yummy, the tyre pathiri is an alternative to your usual breads, chappathi and appam, that goes well with any curry too.
2 glasses of white boiled rice (Ponni variety)
1 cup coconut, grated
Salt- to taste
Soak the rice in lukewarm water for half an hour.
Add a little water to the coconut and squeeze to get thick milk.
Wash the rice and drain. Grind it with salt to a stiff dough which can be scooped.
Divide to large balls.
Place each ball on a piece of greesed banana leaf and flatten with your hands to a thick round. Cover with another piece of banana leaf.
Heat an earthenware and place a pathiri on it with both pieces of banana leaf. Cover the earthenware and cook.
Uncover from time to time and turn the pathiri so that both sides are evenly cooked.
Cover again and continue to cook till the banana leaves are wither.
Now remove the banana leaves and turn the pathiri over again.
Press with the back of a spoon.
Hold with a tissue paper and roll so that rim also is properly cooked.
Transfer to a plate and pour some coconut milk on the surface.
