Here’s an all new rice recipe, with protein filled soya chunks, easy to make but delightfully tasty
3 cups biriyani rice
½ cup soya chunks
¼ cup ghee
¼ cup Oil
1 tsp ginger, crushed
1 tsp garlic, crushed
1 cup onion, sliced
½ cup carrot, sliced
½ cup cabbage, sliced
2 green chillies slit
½ cup capsicum, sliced
1 tomato, chopped
A few coriander leaves, chopped
½ tsp black pepper powder
½ tsp turmeric powder
½ tsp garam masala
Juice of one lemon
Salt - to taste
Wash the rice, drain and keep aside.
Cook the soya chunks in water added with salt, squeeze out the water and keep aside.
Heat the ghee and oil in a pan and sauté the ginger and garlic.
Keep aside the pieces of one onion and add the remaining onion to the ginger and garlic followed by the soya, carrot, cabbage, green chillies and salt, stirring all the while. Do not overcook.
Now stir in the capsicum, coriander leaves, black pepper powder, turmeric powder and garam masala powder. Cover and cook for three minutes.
Heat the remaining ghee and oil mix in another pan and fry.
Kept aside onion pieces keep aside.
Add the rice and gently stir fry for 2-3 minutes.
Pour five cups of water and add salt. Stir and cook till all the water is absorbed.
Combine the lemon juice with the prepared masala and mix in with the cooked rice.
Garnish with coriander leaves and the fried onion pieces.
