Pepper Parotta

Steaming hot spicy parottas laced with eggs; forget calories for once and indulge in this lip smacking delicious snack.

Ingredients

1 cup maida

1 cup wheat flour

Ghee, as required

2 eggs

1 tsp black pepper powder

A few coriander leaves, finely chopped

Salt, as required

Preparation

Combine the maida, wheat flour, ghee and salt together by rubbing them with your hands

Add enough water and knead to a stiff dough
Divide the dough
into nine balls€”three big, three bigger and three biggest. Roll out each ball to a poori shaped discs and keep aside
Combine the eggs with black pepper powder, coriander leaves and salt to a batter

Now, heat a greased griddle and place one of the smallest poories on it

When one side is done take some egg batter in a spoon and pour on the poori

Fold in the poori from four sides towards the top to a square shape.

Apply a little ghee on both sides and turn over so that both sides are evenly toasted

Place the bigger poori on the griddle and when one side is done, pour some egg batter on it
Now, place the
toasted, square shaped poori in the middle and fold the bigger poori from four sides towards the top. Apply a little oil on both sides and toast turning over

Repeat the process with the biggest poori as well

Now, repeat with the remaining two sets of six pooris to make three pepper parottas

Serve hot
