Paneer Papad Fritters

It's great to be inventive; this quirky paneer snack is made interesting with a crunchy covering of papad, that wafer-thin crispy flattened bread that's everybody's favourite.

Ingredients

1 cup crumbled paneer

1 tbsp cornflour

Salt to taste

1 tbsp garlic, grated

1 tsp chilli powder

2 tsp aamchoor powder (dry mango powder)

1 tsp garam masala powder

1 tsp coriander powder

5 tbsp maida

¾ cup crushed papad

Oil for deep frying

Preparation

Put the paneer in a plate and knead well with the corn flour

Add the salt, garlic, chilli powder, aamchoor powder, garam masala powder, coriander powder and mix well

Shape mixed paneer into long cylindrical rolls. Keep aside

Combine the maida with ½ cup water and required salt in a bowl and mix well

Dip each roll into the flour-water paste, and then roll in the crushed papad

Deep fry in hot oil until they turn golden brown in colour on all sides

Drain on an absorbent paper and serve immediately with tomato ketchup on the side
