Fish Pulao

Pulao is a dinner table delight! Tweak that recipe in your cookbook to make a fish pulao in an all new Malabari style!

Ingredients

2 cups biriyani rice
1 tsp red chilli powder
½ turmeric powder
300gm good quality fish, cut in pieces
Oil as required
¼ cup ghee
1 large onion, chopped
7 green chillies, chopped lengthwise
1 tbsp cashew nuts, crushed
1 tbsp raisins
1 inch piece of cinnamon
2 cloves
2 cardamoms
1 tsp garam masala powder
A sprig of coriander leaves, chopped
Salt to taste

Preparation

Wash the rice and drain. Keep aside. 
Marinate the fish in a mix of red chilli powder, turmeric powder and salt
Deep fry them in the heated oil in a pan
Pour quarter cup each of ghee and oil in another pan and fry the onion, cashew nuts and raisins. Keep aside
Add the cinnamon, cloves, cardamoms, green chillies and salt to the remaining ghee-oil mix in the pan
Pour three and half cup water and add the rice when the water starts to boil. 7. Cover the pan and cook till all the water is absorbed
Uncover and add half portion of the fried fish after mincing.
Combine half portion of the fried onion, cashew nuts and raisins as well as the garam masala with the rice
Transfer the rice to a serving plate and garnish it with the remaining portion of the fish, onion, cashew nuts and raisins as well as coriander leaves. Serve hot
