Eggless jackfruit cheesecake

This season of jackfruits will see end number of experiments with this delectable fruit, and the latest recipe to hit us is the jackfruit cheesecake! Well, what more could you think of?

Ingredients

For the crust


½ cup peanuts

1/3 cup grated coconut

2 tbsp coconut milk powder or milk powder

1/3 cup raisins

1-2 tsp water


For the cream cheese filling


250gm cream cheese

150ml whipping cream (whip it to soft peaks)

1 cup jackfruit pulp, pureed out of 20 jackfruit bulbs

2 tbsp sugar


For garnishing


A few jackfruit pieces dipped in melted chocolate


Preparation

Grind the peanuts down to flour in a food processor or in a blender

Add the raisins, coconut, and coconut milk powder or milk powder

Grind until the raisins are broken down

Add the water and pulse again (the mixture needs to hold together when pressed with your hand)

Press into a spring form pan. Using the backside of the spoon, press the mixture tightly so that it

remains flat

Keep in refregirator to chill

In a separate bowl, using an electric beater, beat the cream cheese until soft

Add the sugar and beat further

Add the jackfruit pulp into this mixture and continue to beat

Add the whipped cream into the cheese cream and fold it gently

Finally, fold in the jackfruit pulp into the cream cheese mixture and mix well

Take the spring form pan out from the refrigerator and pour the jackfruit cream filling into it

Garnish with diced and chocolate dipped jackfruit pieces. Refrigerate overnight or until set

Eggless Jack fruit cheese cake is ready to be served cold
