Recipes that will sprinkle magic in your Vishu sadya

It's unfair to ask what one looks forward to the most on the day of Vishu. All bets are off as most of us would say, the kaineettam. But it doesn't take long to get them to rethink! For this Vishu, try out the recipes that we suggest and get your family to eat from home instead of making that reservation in a restaurant that claims to offer a homely Vishu sadya.

Let's start with something sweet. A pineapple curry that touches upon a fine note of coconut blended with minimal spices to exude that perfect balance of sweet, sour and piquancy. Let the feast begin!

The sambar is always welcome, be it on an ordinary day or a special occasion. Here, let's try and make a simpler version of sambar, the indisputable King of curries in a sadya.

How can you keep away from jackfruits this season? Get hold of a tender jackfruit, prepare this easy seasoning, throw in some scraped coconut along with coconut oil, and just watch the magic unfold.

Idichakka thoran

Up next is a gorgeously thick and creamy moru curry, where the succulent ash gourd is cooked lightly and mixed with curd blended with coconut mush. When Vishu comes calling, it's time to make a splash with moru curry.

Along came the mangoes! They are aplenty this season, so put them to great use. Speaking of greatness, try this mango pachadi that surprises you at every other step of its preparation; a simple recipe with a rare mix of mangoes and coconut milk, this pachadi might well be the star of the show.

For additional glory, let's bring into the picture, the addictive inji curry, which could be rephrased as every malayali's 'feel of the fantastic' during a Vishu sadya. There's nothing that beats the satisfaction of making a dip of the inji curry for the array of chips laid on the plantain leaf too!

So, there, your happiness for this Vishu is ready to be served.
