Mutton Red Curry

Served hot, hot, hot this mutton red curry has a beautiful red colour courtesy of ripe tomatoes and red chilli powder!

Ingredients

1 kg Mutton
4 tsp chilli powder
1 tsp. Coriander powder
1 tsp. Mustard seeds
¼ tsp Fenugreek seeds
1 tsp. Cumin seeds
1 tsp. Ginger, sliced
1 tsp garlic cloves
3 tsp vinegar
½ cup refined vegetable oil
2 cups onion, finely sliced
250 gms ripe tomatoes, finely chopped
Salt to taste
3 cups hot water

Preparation

Wash and clean the mutton. Cut into medium size pieces.
Grind items 2 to 8 with vinegar into a paste.
Heat oil, sauté sliced onions and add chopped tomatoes. Fry well and add the ground paste.
Fry on low flame till the oil rises to the surface. Add the meat pieces and salt. Mix well.
Add 3 cups hot water to cook the meat.
Cover the vessel with a deep lid containing boiling water. This will help the meat to cook well.
Keep on low heat and simmer until the gravy starts thickening.
Once the meat is cooked, remove from fire and serve warm.
