Ever thought of cooking a handful of cashew nuts and immersing them in rich gravy to make for a fantabulous curry? Well, here's your chance to try it.

Ingredients

250gm cashew nuts


Powder together


1 piece cinnamon

2 cardamom pods

A pinch of cumin seeds

A small star anise

½ tsp pepper corns

2 cloves


¼ tsp turmeric powder

½ tsp coriander powder

½ tsp red chilli powder


2 onions, sliced

1 tomato, sliced

1 piece ginger, minced

3-4 garlic pods

2-3 green chillies

1 sprig curry leaves

1 cup thick coconut milk

1 ½ cup thin coconut milk

250ml oil


For seasoning


1 tsp mustard seeds

2 red chillies

1 sprig curry leaves

1 dsp shallots


Preparation

Pressure cook cashew nuts in a cooker for 3 whistles. Keep aside

Heat oil in a pan and saute onion, ginger, garlic and green chillies

Add the powdered masala along with chilli powder, turmeric powder and coriander powder

Add enough salt and mix well

Pour in the thin coconut milk and let it boil

Now, add the cooked cashew nuts, and then the tomato

Add the thick coconut milk

Make a seasoning of the ingredients listed, and drop over the prepared curry
