This deep fried pomfret, marinated with a spicy masala and stuffed with a mix that gives a hint of sweetness, is the perfect accompaniment for any kind of bread. This fried-to-perfect single-boned seawater fish dish can also be served as a starter.

Ingredients

2 pomfrets

For the masala

10 shallots

8 garlic

10 dried red chillies

1 tsp black pepper

1 inch piece of ginger

1/2 tsp turmeric powder

1/4 tsp mustard seeds

1/4 tsp cumin seeds

1/4 tsp fenugreek seeds

Oil as required

Salt as required

For the stuffing

2 onions sliced

1 tomato chopped

1 egg

2 green chilies chopped

1 tsp sliced ginger

1 tsp vinegar

1/2 tsp sugar

Salt as required

Preparation

Grind dried red chillies, shallots, garlic, ginger, mustard seeds, fenugreek seeds, black pepper cumin, turmeric powder and salt

Make a coarse paste

Apply the paste on the fish

Cover the, evenly with the spices

Heat oil in a pan

Add onions, ginger and green chilies, saute for five minutes

Add tomatoes and saute again

When the tomatoes turn mushy, add sugar, saute for two minutes

Stuff this filling inside the fish

Beat the egg and set aside

Heat oil in a pan

Apply the beaten egg on the fish

Fry them covered

After 5 minutes, flip the fish over

Flip and fry till both sides turn light brown

Drain the oil

Serve hot with garlic bread
