Sanaroti

A layered delicacy from Malabar, sanaroti can be made any day for it has very basic ingredients. Its combination of rice, coconut milk and meat in alternate layers is a mouthwatering treat.

Ingredients

¼ kg finely chopped beef

2 big tsp oil

2 onions cut into 4

6 ground green chillies

1 small tsp each, ground ginger and garlic

2 big tsp coriander powder

1 small tsp red chilli powder

½ small tsp turmeric powder

Salt, as required

1 small tsp, garam masala powder

1 scraped coconut

¾ kg raw rice

1 egg

2 pods cardamom, powdered

Ghee, as required

Preparation

Clean the beef thoroughly, and keep aside

Heat oil in a pan. Add onions, green chillies, ginger and garlic and sauté well

Now, add coriander powder, red chilli powder, turmeric powder and salt. Saute well until it is roasted

When you get the aroma of masalas being roasted, add beef to it

When water has completely dried out, add garam masala powder and stir well. Turn off the stove

Squeeze out the coconut milk from the scraped coconut, and take the first and second milk that comes out of it

Grind the raw rice with second milk. Then, add first milk to it and stir it well

Add beaten eggs and powdered cardamom to this mixture. Stir well

Take a steel plate and grease it with ghee. Pour 2 big spoons of batter and spread it evenly

Now, in a steamer, keep the plate covered with a lid and let it cook

Once cooked, put some beef masala over it. Add more batter on top of it, and let it cook again

You can pour the batter 2 or 3 times repeating the same process. Each layer takes 10-15 minutes for cooking

Delicious sanaroti is ready to be served
