A sweet dish from the kitchens of Malabar, Pidi Kari features on the breakfast menu during the month of Ramadan

Ingredients

100 gm rice with 2 parts ponni rice and 1 part kaima rice, soaked in cold water for 3-4 hours
Thick coconut milk squeezed from 1 scraped coconut blended with 1½ cup water
2-3 cups thin coconut milk from the same coconut
½ kg banana
¼ kg sugar
10 cardamom pods powdered

For Pidi

100gm ponni rice soaked in hot water and ground to a thick paste

Preparation

Chop the banana into thick but small pieces
Pour the thin coconut milk into a pan along with the banana and sugar, and let it boil
Oil your palms and roll out long oval shaped pidi out of the dough
Steam them for half an hour in a traditional steamer over a plantain leaf
Blend the soaked ponni and kaima rice to a fine paste
Before heating the pan, pour in the thin coconut milk and blended rice paste
Add some water to dilute the mixture
Add required sugar, and light the stove
Keep stirring to ensure there are no lumps 
Add the boiled banana to it, and let it boil
Add the pidi. Add some water, if it is too thick
Mix the cardamom powder with the thick coconut milk
Pour it over the banana mix
Take off the steam when it starts to boil
Have it warm or cold
