Egg surkha and mutton curry

A specialty in the northern parts of Kerala, the egg surka paired with mutton curry is a delight seldom known to others living in other parts of the state. Try this rarity in your own kitchen.

Ingredients

For egg surkha


1 cup par-boiled rice

2 eggs

Salt to sufficient quantity

Oil for frying



For mutton curry

½ kg mutton

25 g cashew nut

1 tbsp grated coconut

2 cloves

1 cinnamon

2 cardamoms

2 tbsp oil

2 cups of sliced large onion

Curry leaves

1 tbsp ground garlic

1 ½ tsp ground ginger

4 cut green chilies

½ cup finely cut tomatoes

3 tsp Kashmiri chilli powder

1 tbsp coriander powder

½ tsp turmeric powder

¼ tsp black pepper powder

½ cup water

Salt to sufficient quantity

1 tsp ghee

Coriander leaves for garnishing


Preparation

To make egg surka


Wash rice well and soak in water overnight

Grind the rice in the morning without adding water (if needed add very little water)

After grinding well, add egg and grind a second time, add salt, mix well and keep

Heat oil in a pan and pour ladleful of flour into it

Fry both sides and take out when it bubbles well and turns golden brown in color


To make mutton curry


Keep mutton chopped and cleaned

Mix ingredients listed under 2, grind and add cashew nut paste and keep aside

Heat oil in a cooker. Put large onions and curry leaves and stir well

When it turns golden brown in color, add ingredients listed under 5 and stir well

Add ingredients listed under 6 to it and stir in low flame

When the aroma of masala comes out, mix it well with mutton chops and sufficient quantity water and salt, and place in cooker. Close the cooker and after one whistle cook in low flame

Allow it to continue cooking for ten minutes

Once the pressure is released, open the cooker, mix cashew nut paste to it and boil for five minutes

Mix by adding ghee and coriander leaves

Remove and serve with egg surkha
