It’s tangy, it’s sweet, it’s tomato watermelon salad!
3 to 4 small tomatoes, sliced into ¾ slices
1 cucumber, deseeded and sliced into ¾ slices
1 cup of deseeded watermelon, sliced into ¾ slices
1 avocado, peeled, halved and cut into ¾ pieces
1 tbsp basil leaves, coriander leaves, oregano and chives, chopped fine
¼ tsp coriander, powdered
3 tbsp extra virgin olive oil
3 tbsp balsamic vinegar
Salt and pepper to taste
Mix tomatoes, cucumber, watermelon, avocado, chopped herbs and coriander powder together in a bowl.
Whisk olive oil and balsamic vinegar together in another small bowl to prepare the marinade.
Add the marinade to the tomato watermelon mixture and toss well.
Now add salt and pepper according to your preference.
