Shrikhand, said to be a Maharashtrian delicacy is very popular in Gujarat and Rajasthan as well. Don't be fooled by its simplicity; made with yogurt and nuts, it would definitely win you over.
1 ½ litres curd/yogurt
175 gm sugar (powdered)
4 cardamom pods (powdered)
A pinch of saffron
1tbsp hot milk
1 tbsp pistachios, almonds etc (crushed)
Pour the curd into a clean muslin cloth, tie and hang for about 8 hours till all the water in the curd is drained out.
The solid curd is then mixed in a bowl with sugar and powdered cardamom.
Dissolve the saffron in a tablespoon of hot milk. When the milk attains the colour of the saffron, pour into the curd, cardamom powder and sugar mix and mix well.
Transfer to the serving dish, decorate with the crushed pistachios and almonds and serve chilled.
