Shikampuri Kebab

Deeply flavoured kebabs with herbed stuffing.

Ingredients

2 tsp oil
4 tsp ghee
1 tsp garam masala spices, whole
1 tsp peppercorns
½ kg boneless mutton
1 tbsp gingergarlic paste
1 tsp green chillies
1 tsp chilli powder
½ tsp turmeric powder
Salt to taste
00 ml water
75 gm Bengal gram, soaked for 2 hours

For the Stuffing:
50 gm hung curd
1 tsp mint leaves
2 tsp coriander leaves
4 tsp fried onions
2 tsp onion, chopped fine
Salt to taste
Ghee for frying

Preparation

Heat oil and ghee together in a heavy bottomed pan and temper garam masala and peppercorns.
Add mutton pieces, ginger and green chillies to this and sauté till water from mutton comes out.
Now add chilli powder, turmeric powder and salt and cook on low heat for an hour. When meat becomes soft add soaked Bengal gram.
Cook for 3040 minutes more.
Remove from heat, cool and grind in the mixer.
Now combine all the ingredients for the stuffing except ghee and make the stuffing.
Shape balls that weigh 30 gm each from the ground meat.
Fill each ball with stuffing, flatten into patties and fry in ghee.
Serve hot.
