Haleem

Made of mutton and wheat, haleem is a meal in itself. Here is the Hyderabad version!

Ingredients

150 ml ghee
50 gm pepper
1 tsp cinnamon
5 tsp green cardamom
4 bay leaves
1 tbsp shah jeera
8 green chillies, whole
50 gm ginger garlic paste
800 gm boneless mutton, cut into matchstick size strips
Salt to taste
1 tsp turmeric powder
125 gm wheat
150 gm fried onions
4 tsp coriander leaves, chopped fine
2 tbsp mint leaves, chopped fine
A pinch of saffron

For garnishing:
Ghee
Lemon juice
Chopped coriander leaves
Chopped mint leaves
Fried onions
Saffron

Preparation

Heat ghee in a handi or heavy bottomed vessel and temper pepper, cinnamon, green cardamom, bay leaves and shah jeera.
Add green chillies, ginger garlic paste to this and sauté for 5 minutes. Add mutton and cook for 10 minutes.
Now add salt and turmeric to this and sauté till water from mutton comes out. Now add 2 litres of water and cook for 3 hours on low heat.
When meat is half cooked, add wheat which has been soaked for 2 hours, stirring continuously. It should all get mashed.
Now add fried onions, coriander leaves, mint leaves and saffron and cook for 1015 minutes.
Garnish with listed ingredients and serve.
